Fruit Pizza
Store bought frozen pie dough, deep dish (usually 2 to a package)
1 block cream cheese 1 T. vanilla, 1 c. powdered sugar
Assorted fruits in season, especially colorful ones i.e., kiwi, pineapple
apple, orange slices, strawberries, raspberries, blue and blackberries, mango slices etc.Let pie dough soften at room temperature for 5 minutes in a pizza pan or rectangular glass dish. Cook at 350* for about 8 minutes. Take out of oven, sprinkle with cinnamon sugar mixture and let cool. Mix cream cheese, vanilla and powdered sugar and spread gently & evenly on cooked pie dough. Arrange sliced fruits on top in a pattern or however you like. Slice like pizza, either in wedges or squares and serve for dessert!
Smoothie (Home Girl Café in L.A.)
In a powerful blender, pack as much freshly washed spinach as you can. Add ½ can of frozen limeade, 1 c. fresh mint and a handful of ice. Blend on highest speed until smooth.
Drink your yummy greens!
Turkey Lettuce Wraps
Iceberg lettuce, carefully washed and in sectioned into separate leaves. Gently pat dry.Cook ground turkey, chicken, tofu or beef with onions, mushrooms, water chestnuts and maybe a few bean sprouts. When slightly cooled, spoon filling down the middle. Pour a bit of Hoison Sauce (found in Asian section of grocery store) on filling wrap and eat. You may even want to dip in Hoison sauce as well. Can also serve on a bed of rice.
Fruit Kabobs
Wooden skewers
Fresh fruit in chunky form…pineapple, strawberries, bananas, watermelon, mango etc.Alternate on skewer from end to end. Serve as a snack, side dish or for desert. Great way to add color to a plate.Type your paragraph here.
Zucchini Rolls
(great for when you grill)
Slice green or yellow zucchini lengthwise, about ¼”- ½”thick. Grill so zucchini is soft enough, but won’t fall apart.Lay zucchini flat. When semi cooled, spread hummus, feta cheese or parmesan cheese, chopped sundried tomatoes and a little finely diced red onion. Roll gently and connect with a toothpick. Great as a healthy side dish.
Halloween Mummy Wraps
Lay flat a fresh flour (whole wheat or spinach are healthiest, but any will do) tortilla. Spread sour cream, or La crema down middle. Add cooked chicken, roasted corn, sautéed onions and /or peppers.
Wrap like a burrito, binding the ends with a dab of water. On the seamless side, add 2 little dollops of sour cream, then and add a slice of olive on each dab for eyes!
Monster Mouths
Hard, crunchy apples are best for this recipe i.e., Granny Smith, Honey crisp, Washington etc.
If handy, use an apple slicer, discarding the core.Spread on each side of apple slice: Nutella, peanut or almond butter. Place mini marshmallows or candy corn closest to the skin of the apple. Place one slice on top of the other, thus creating a mouth like snack.
Bruschetta
4-5 cans petite diced tomatoes (can use fresh, but remove skin)
8-10 whole cloves of garlic 1-2T. Fresh or dried basil
1-2 T. dried oregano 1-2T. Garlic salt
Mix all ingredients in a large casserole type pan. Roast in oven about 20-30 minutes at 350*F. Stir as it roasts. Let cool. Remove garlic and either mince or discard.
On a crostini, or crackers, spread a little feta cheese or Boursin cheese. Spoon Bruschetta on top and enjoy as an appetizer or yummy snack.

Quinoa, Black Bean, Roasted Corn and Avocado Salad
(Recipe from Trader Joes’ Red Quinoa package)
1 c. Red Quinoa 1/2c. Finely diced red onion
2 c. Broth 3/4c. (T.J.’s)Cilantro salad dressing
1 15 oz. can black beans, drained ½ bunch cilantro
2 c. roasted corn, frozen & thawed (TJ’s) ¼ c. olive oil
1-2 ripe avocados 1 fresh lime grape tomatoes (optional)
Cook red quinoa with broth according to directions. (Do not overcook)! In a separate bowl, combine black beans corn, avocado and onion. Toss gently with Cilantro Salad dressing. Add salt, pepper and fresh squeezed lime juice. When quinoa cools, serve on platter with mixture poured on top. Garnish with cilantro.
Parmesan Popcorn
Pop a couple of cups of popcornIn a skillet, melt 4-6 Tbsp. of butter. Sprinkle 1-2 T. powdered Ranch dressing In butter mixture and stir. Pour over popcorn. Add grated or parmesan cheese as desired. Mix and enjoy!
Jicama Salsa
1 small red onion juice of 2 limes
3 oranges 1 large jicama, outer brown part peeled
1 small cucumber 1 fresh red, yellow or orange pepper
1 fresh, ripe mango Tajin!
Chop red onion and squeeze lime juice to marinate. Slice or cube jicama, peppers and cucumber w/o seeds and peppers. Chop orange sections in pieces (keeping juice), Mix together with onions. Add mango. Refrigerate for an hour. Serve with chips or makes a great topping on chicken or meat.

Stick pretzels String cheese
Chives or green onions (green part only)
Cut string cheese in half. Slowly insert pretzel in middle about ½ way or less. Peel ends of string cheese so it frills a bit. Tie chive in a bow if possible, where pretzel and cheese meet. When you hold it up, it will look like a broom!

#10 can diced petite tomatoes 1 small can green chilies, diced
5-8 chopped cloves of garlic
1-2 onions, chopped
1-2 T sugar
Mix all ingredients together and roast in the oven at 350*in a large pan or casserole dish, until ingredients are roasted….maybe 20-30 minutes. Let cool.
Add a bunch of freshly washed, chopped cilantro, 1-.2 T cumin, garlic salt and fresh lime to taste. Tastes better if made few hours ahead, so spices can mingle.
Serve with chips!

Vegetable Face Platters
Use any of the following: Carrot sticks, broccoli, cauliflower, kale, green beans, tomatoes, edamame, mandarin oranges, raisins, cucumbers, garbanzo beans (chick peas), etc. Using a squeeze bottle, let kids draw with ranch dressing or hummus on a dinner plate…..let them use their imagination to create stick figures, faces, landscape designs, animals….all with vegetables. Best thing is, they get to eat it their art!
Turkey, Black Bean Chili
1 lb. ground turkey meat 1 onion, chopped
Few cloves of garlic 1 can stewed or petite cut tomatoes
1 can black beans garlic salt pinch dried oregano
Brown onions and garlic in large pot. Add ground turkey meat. Stir and cook until browned. Add tomatoes, beans and seasoning. (I add a bottled garlic sauce that can only be ordered online but you can use your own recipe if needed). Let simmer for about 20 minutes. Serve with warm tortillas.
Spinach, Feta Cheese, Date Salad
1-2 bunch of freshly washed spinach 4 oz. Feta cheese
½ c. pecan pieces (toasted always taste better) 4-6 pitted fresh, dates, chopped
Caramelize onions (if desired) Balsamic dressingThinly slice a white or yellow onion. Melt a little butter in skillet and sauté onions until soft and turning golden brown. Sprinkle a few dashes of RICE VINEGAR directly onto onions. Stir and let vinegar cook off a few more minutes. Set side. Lay spinach on platter. Add caramelized onions: sprinkle chopped dates, pecan pieces and Feta cheese and sparingly pour Balsamic vinegar on top. Serve.
Banana Peanut/Almond Butter Sushi Roll
1 large ripe banana, peeled
½ c. almond or peanut butter
1 c. rice krispies treat
1 burrito flour or whole-wheat tortilla
On the upper half of the tortilla, spread your nut butter in a reverse-happy face shape. On the lower half of the tortilla, place the peeled banana in a happy-face smile shape as close to the edge of tortilla as possible. Begin to roll from the bottom of the tortilla toward the top as tightly as possible, until complete. In a deeper-dish casserole sheet, spread rice krispies treats evenly. Hold the tortilla burrito in your hand and coat the tops and sides with your nut butter. Flip upside down on rice krispies so they can adhere to the nut butter. Now, carefully flip the tortilla up and coat with any remaining nut butter. Place in the rice krispies and coat. Place the whole thing on a cutting board and slice into 1-2 inch segments, thus looking like sushi!
Apple, Marcona Almond, Manchego Cheese Salad
2-3 Granny Smith, Honey crisp or Gala apple (crunchy is best…not a soft texture)
Handful of Spanish Marcona almonds or blanched almonds
About 6 oz. Manchego cheese, sliced very thin and crumbled bit
½ - ¾ c. Olive oil
¼ c. rice wine vinegar
Mix all food ingredients together in bowl. Mix oil and vinegar separately, then toss to coat. Add a little chopped chive or green part of green onion for color.
Refrigerate until chilled and serve. This recipe is all to taste with oil and vinegar. Add or delete amounts accordingly, but specifically use rice vinegar.
No Bake Energy Bites
2 c. dry rolled oats 1 c. mini chocolate or carob chips
1 c. peanut or almond butter ½ c. ground flaxseed
2/3 c. honey 2 tsp. vanilla
Mix all ingredients together. Roll into small balls (about 1”). Refrigerate until chilled. Great for a quick snack.
This is a great recipe as you can alternate ingredients with different nut butters, add shredded coconut, sunflower seeds, chia seeds etc.
Waffle Cone with Hummus and Veggies
Waffle cone, large fresh spinach hummus, fresh tomatoes
Chicken sausage, cut in pieces grilled peppers, onions
Shredded carrots 1 c. Cooked quinoa (if desired)
Italian dressing Avocado
Holding waffle cone upright, gently spoon 1-2T of hummus in bottom of cone. Add same amount of cooked quinoa (if desired). Add peppers, onions, tomatoes. Layer sausage pieces,
Spinach, carrots and drizzle the top with a little Italian dressing and avocado slices and serve. Great alternative to ice cream!

Yogurt Parfaits
Fresh or frozen fruits – strawberries, blueberries, pineapple, blackberries, raspberries etc.
Yogurt – preferable with lower sugar (Greek is a good choice)
Granola, sunflower seeds, raisins
Alternate yogurt with fruit…sprinkle with toppings.
